In this recipe I infuse a turkey breast with butter stuffed with garlic and herbs. Did it make the meat taste greasy? Not at all! The butter made the lean meats taste wonderfully tender and moist without the fat. Plus, a lot of butter will drain to the bottom of the pan before and during frying, so there won’t be too much left on the meat. However, the buttery juices at the bottom of the pan turned out to be so flavorful and delicious that we couldn’t resist using them as a dipping sauce.

The oven bake temperature of 325F was chosen on purpose. As I mentioned in my Slow Roasted Chicken Breasts post, I experimented a lot before arriving at what I believe to be the optimal oven temperature for roasting chicken breasts. Turkey breasts are not that different and I use the same temperature for them.

Similarly, higher temperatures will dry out turkey breast meat. I wouldn’t go higher than 325 degrees F. This temperature helps the meat retain moisture and prevents it from drying out too quickly. The lower baking temperature doesn’t really add any additional benefit.

I used to cook my turkey breast at 165F and was quite happy with the results. After reading ThermoWorks’ blog post on the proper cooking temperature for chicken and doing some additional research, I changed my approach. I now cook lean turkey breast meat at 155F and love the much improved results.

Grilled Turkey Breast

155F is the temperature I get the exact texture I like. Depending on your preference, you may choose to go a little lower or higher and that’s absolutely fine. Note that if a turkey breast is taken out of the oven at 155F, the internal temperature will continue to rise to about 165F. If you have a grill thermometer like many of us, use it! If not, get one! Something like the ThermoPro TP08 is a great, inexpensive tool that any home kitchen will benefit from.

If you want your roasted turkey breast to have nicely browned and crispy skin, as shown in the photos above, do the following: 1. Roast the turkey breast until the internal temperature is about 10 degrees below the final temperature . 2. Brush the top of the breast with the pan juices. 3. Turn the broiler on low. 4. Continue to cook on low broiler until the internal temperature of the turkey breast reaches the desired temperature.
