Since the Mediterranean region stretches from parts of Europe to North Africa and the Middle East (including the Holy Land), it’s hard to give you a short answer on what breakfast should look like.
Best Mediterranean Diet Meal Plan For Beginners
A weekday Mediterranean breakfast is a quick meal and usually delicious. And if we talk about Mediterranean food, it means that it looks like a breakfast such as hummus toast or a breakfast dish with eggs and vegetables.
If you’re curious, here are some quick Mediterranean breakfast ideas from different parts of the Mediterranean:
1- In Italy and Spain, you can have a breakfast of baked wholemeal bread with a portion of soft cheese and some fresh fruit.

2- In Egypt, where I grew up, foul muddams (a special fava bean, slowly cooked overnight) is a protein-packed breakfast (recipe just arrived!) or, a quick-cooked egg and fresh tomatoes and ma ma. Cucumber (yes, salad for breakfast!).
3- In the Eastern Mediterranean, it is not unusual to display olive oil on the table at the breakfast table. One of the Holy Land’s favorite breakfast offerings is warm pita, dipped in extra virgin olive oil and sprinkled with za’atar (a blend of Mediterranean herbs and sesame seeds).
4- In fact, in many parts of the Mediterranean, all kinds of wheat and couscous make a great cereal – sweet, or sometimes sweetened with honey, then topped with almonds.
Mediterranean Overnight Oats
The story is a bit different on weekends. An Eastern Mediterranean breakfast (or brunch)–made by a master of the Levant kitchen like my mother-in-law–a style of eating a healthy, balanced meal meant for a long, leisurely visit — you should bring an appetite and long conversation.
Like a meze, a fun Mediterranean brunch is aimed at a crowd and will include a little bit of everything. Very small dessert. Again, mostly vegetarian. Shakshuka’s frittatato falafel (and you can make it in the air fryer if you want) and fresh baked manakish, many hummus options, even salads like tabouli or this simple Mediterranean salad.
But if you’re looking for a simple and modern way to bring a Mediterranean element to your brunch, this Mediterranean dinner board will do the trick. The inspiration for this board came from my previous meze plate (another great option for entertaining.) and remember that this board is more of a brunch board.
Mediterranean Diet Breakfast Recipes For Easy, Healthy Mornings
For serving, you need a large board or plate; A few cups to hold points and EVOO etc.; A few tools. I like to put my big bowl in the center as the focal point. I use leftover plates to make shapes and movements on the board. Usually, the spaces between the plates act as pockets to easily arrange other items.
1- The staple on this breakfast board is the falafel (falafel, protein-rich turkey patties.) You can make the falafel patties ahead of time and freeze them until ready. Fried (which is more common), baked or dried in leaves. Air Fry
2- Dips. Creamy hummus and baba ganoush (eggplant heads) are always winners. Both can be prepared the night before and stored in a sealed glass container in the refrigerator.

4- Cheese. Not a ton of cheese going on the board, but enough to add a little moisture. I usually use homemade labneh with a little olive oil on top, or as you can see on the board, a few slices of good fete cheese.
5- Fresh vegetables and favorite foods. Here I used diced tomatoes, cucumber and chives. Because I made the tabouli the night before, I added the leftovers to a small bowl (the tabouli is a great compliment to the falafel.) Don’t forget some marinated olives, artichokes, or capers. A handful of grapes is used as an antiseptic.
6- Add bread. Flatbreads like pita are the best choice for this Mediterranean breakfast. I like to cut the pita into pieces that fit easily on the board.
Easy Mediterranean Vegan Breakfasts
You may have already noticed that this breakfast board combines a few different Mediterranean recipes. It’s easy to prepare, but the best thing I can suggest is to work ahead.
You can prepare the falafel patties days or weeks ahead and freeze them, check out the full falafel tutorial here. When you’re ready to make your breakfast, fry or bake the falafel, depending on the recipe (you don’t need to thaw the patties.)
Similarly, proceed to make hummus, baba ganoush and tabouli. I do this the night before, but you can do it two nights ahead if you need to.

And one last tip, go to your grocery store and check what they have for different olives and artichokes and others. Lots of great olives and lots of good stuff to add to this board!
