Butternut Squash Soup Food Network

Butternut Squash Soup Food Network – I feel like I need to buy one myself. My kids still have scars from the one time I made them eat some bad pumpkin soup about 9 years ago. NINE YEARS AGO! They act like it’s a scary event. I will admit that I got the recipe from my cousin’s wife and it wasn’t heaven sent but I think my kids are a little weird.

So I decided to try a delicious soup made with pumpkin’s first cousin – butternut squash – and see how my kids liked it. This time I was doing it from scratch, building along the way. I grabbed one of my favorite kitchen resources – THE FLAVOR BIBLE – off the shelf and started browsing for what goes well with butternut squash. I was not surprised by my results. Butternut squash pairs well with butter, sage, garlic, cream, chicken stock, nutmeg and Parmesan cheese.

Easy Butternut Squash Soup Recipe

This Creamy Butternut Squash is made with roasted butternut squash which I believe is an essential part of making a delicious soup. Roasting brings out the best parts of the vegetable and really brings out the sweetness and tenderness in butternut squash.

Onions and carrots are then fried in butter to caramelize and bring out their sweetness. A little garlic is added and you can use fresh garlic or granulated garlic powder. Chicken broth is essential in soups as it adds flavor.

I love using fresh herbs in my cooking as they are so good for you! They can change a meal from boring to amazing and even less. It also adds flavor without adding fat and calories. I pick sage leaves to add to this butternut squash soup as it adds a fresh earthy flavor that screams Fall.
