Cottage Cheese Made From Goat’s Milk – Today’s recipe is Homestead Goat Cheese in three easy steps. Making goat cheese at home is easy and this cheese is made without starter culture. All you need is goat’s milk and lemon juice or vinegar. Cheese salt, canned salt or Himalayan salt are optional. Why these salts? They do not contain preservatives or antioxidants that interfere with the cheese making process.

This recipe is also suitable for people who are worried about eating raw milk and cheese. Goat’s milk is heated to 180 degrees Fahrenheit for this recipe. Goat milk is automatically pasted in the process. Raw milk is pasteurized if it reaches 165℉ for 15 seconds.

Pour the milk into a large saucepan and heat over medium heat to 180℉, stirring frequently. Use a stainless steel spoon to stir the milk. Wooden spoons are very difficult to sterilize and should not be used to make cheese. A meat or candy thermometer is used to measure the temperature of the milk. However, a candy thermometer is useful because you can poke it into the side of the pot. Make sure the bottom of the thermometer does not touch the pan.

When the milk reaches 180℉, turn off the flame. Slowly add 1/3 cup lemon juice to the half gallon of milk you are using and stir. Fresh lemon juice or canned lemon juice will both work. However, some cheap canned lemonades may contain additives that interfere with the clotting process. Real Lemon brand lemon juice works well and you can find large bottles at Costco. If you don’t have lemon juice on hand, white vinegar will work too.

The acid in the lemon juice should soften the cheese within a few minutes and you’ll start to see solid curds separate from the liquid whey. If you don’t see curd within a minute, you can add 1 more tablespoon of lemon juice until the curdling process starts. Add no more than 1/2 cup of lemon juice to half a gallon of milk. Note that more lemon juice will spoil the taste.

Line one collar over two pieces of chess fabric. Place the colander on a large plate to catch the strained liquid. Pour the mixture into the tyropina. Make sure that the collection tank below does not leak. Simply stop transferring the mixture to the colander and empty the collected basin liquid.
