I do not recommend freezing this salad as leafy greens do not freeze well. But you can freeze roasted butternut squash for later use, keeping for 2 – 3 months. Store in the glass containers mentioned above or use freezer safe baggies. Allow the salad to thaw in the refrigerator before assembling.

Preheat the oven to 425°F. Line a roasting pan with parchment paper or lightly grease your pan.

Roast Squash: Toss the squash with 1 tablespoon olive oil and maple syrup (either place in a medium bowl or shallow dish on a baking sheet). Spread the butternut squash on a baking sheet in a single layer, sprinkle with salt and pepper to taste. Cook for 30 minutes, turning halfway through, or until the squash is fork tender. Remove from the oven and allow to cool slightly.

Dressing: In a small bowl, whisk together the olive oil, vinegar and mustard. Mix until the mustard is emulsified. Add the dill, salt and pepper to the water and whisk again until combined. allocated
