Now, I know I’ve shared about my family’s tradition when it comes to Thanksgiving. And green bean casserole isn’t something we’ve been served recently. Some people absolutely drool over the dish, while others can’t get enough. Some people don’t like mushrooms, and some are disgusted by the pot-like feel of the dish.

If you’ve been watching forever, you might remember my Easy Green Bean Casserole. This is very good. I even made it outside of Thanksgiving! It’s been a staple for almost a decade and I know many of you do it every year.

I also wanted to make an indulgent, decadent version for you. Mainly because someone like my mother would never make a simplified version of me. Ha!

In this green bean casserole, we make a creamy mushroom sauce and use fresh green beans to keep it crunchy. I love this because the only thing I don’t like about a regular green bean casserole (read: using canned or frozen green beans) is that the green beans can be mushy.

These green beans stay crunchy. Cream of Mushroom Parmesan is delicious. It’s not too heavy and the beans won’t drown it. That’s the right amount!

I’ll be the first to say that this time of year I use a jar of crispy fried onions. They are actually quite nice and require a lot less work. Since I’m showing you how to make this from scratch, I wanted it to be the real thing. If you want you can make the fried french onions below, they are very addictive. You won’t be able to stop eating them while making this casserole.

There aren’t many options here, but I have to say the leftovers are fantastic and tasty, without the onions losing some of their crunch.

Second, I think everyone should eat whatever they want on Thanksgiving, traditional or otherwise. This is in stark contrast to #1 above. But hey – I said I had opinions. I didn’t say there was a logical reason!

Third, I never have canned soup near my green beans*. Not on Thanksgiving, not on Christmas, not ever. Creamy mushroom sauce is easy to make, tastes better, and for the cherry on top – it’s completely artificial-free.

* For the innocent reading this, there are quick and easy recipes “out there” that don’t involve much more than just throwing canned mushroom soup, canned green beans, and canned fried onions into a baking dish.

And that, my friends, is all I can say about Green Bean Casserole! This recipe has been around for a long time, probably since the age of 20 when I had it at one of my first Thanksgiving dinners in Sydney (and I’ll never say how long that was, the woman’s age was to remain a mystery, always!).

Ah, memories of a turkey that wouldn’t fit in a tiny apartment oven, pumpkin pies with a weird lumpy texture, and dry homemade breads were my holiday offerings. We butchered a turkey, bought some cubes and cut up a pie and served it as whipped cream and ice cream (right!).

1. Panko breadcrumbs are larger pieces than regular breadcrumbs, so you get a much more satisfying CRACK! Asian aisle of most supermarkets these days, but cheaper in Asian stores.

2. The oil is a neutral tasting oil here at any high temperature. Do not use olive oil (low smoke point).

4. Dish shape – it’s best to use a flat dish rather than a deep dish so you can maximize the surface area for crispy onions! Perfect for a large pan, the 9×13″ / 23 x 33″ glass pan is oversized.

5. Onions overcooked – turn oven down, cover loosely with foil for remaining cooking time. Then remove the foil for the last few minutes to crisp the onions. That’s why it’s important to fry the onions until they’re golden, so they’re golden and crispy once they’re cooked!

6. Make ahead is the best way: cook the beans and make the sauce according to the recipe. Immediately cover the sauce, cool, then refrigerate for up to 3 days (maybe longer, I only did 3 days). Roast the onions a day in advance, let cool completely before storing in a container. Do not put in the refrigerator! Toss the beans with the sauce, place on a baking sheet, cover, then bake for 10-15 minutes to warm through. Remove the lid, top with the onions, then bake for 10 minutes to crisp the onions and brown them!

8. Portion Size – It really depends on how many other sides you have! Conservatively, this easily serves 8 – 12 with 3 or 4 other options (ie one large scoop per person). If this was the only vegetarian side, I’d say it would serve 5 people (150g/5oz beans per person).

The meal serves 8 people and the onions used for the dressing have 2 tablespoons of oil, which I think is a reasonable price (the onions that are served don’t soak up the oil).

I rinse the beans in cold water for a few minutes to prevent further cooking, but you can prepare an ice bath if you prefer. Simply fill a large bowl with cold water and ice cubes. After you finish blanching the beans, drain them and place them in an ice bath, then drain them again when they are cool.
