I only recommend freezing it if you’re going to add it to a smoothie – the texture can get a little different when it’s thawed. Blending it in the smoothie blends well enough that the texture does not matter!
To make the pumpkin yogurt, you’ll want to divide the Greek Yogurt Pumpkin Pie into a bowl. Top it with chopped walnuts or pecans or pumpkin seeds, or drizzle with natural nut butter along with granola or whole grains (my favorite is puffed quinoa!) for a nice crunch. There are many pumpkin recipes to try, as autumn should be called pumpkin! But before you think you’ve tried them all, you should try this healthy pumpkin puree parfait!
Parfaits are versatile, you can have them for breakfast or you can have them as a snack when you lose. Pumpkin yogurt parfaits are also a healthy alternative to pumpkin pie because they taste like pumpkin pie, but have less than 200 calories per serving and just touch of honey or pure maple syrup! The crunchy granola gives it a nice texture, almost like a pumpkin pie!
Easy, Healthy Pumpkin Oats & Greek Yogurt Bowl
These pumpkin pies don’t contain brown sugar, and instead of using vanilla Greek yogurt, which is high in sugar, they use Greek yogurt with added protein.
This is one of those easy recipes that you can make over and over again! Perfect for fall or really, any time of the year!
An Easy Yogurt Parfait with Vanilla Yogurt: Although you can add 1/4 teaspoon of vanilla extract to plain yogurt or for a sweeter option, buy vanilla Greek yogurt for the base of this recipe.

Add Peanut Butter: Peanut Butter would be a delicious addition to these Pumpkin Greek Yogurt Parfaits! When assembled, add a tablespoon of peanut or almond butter right before placing the pumpkin.

Bake: spread the oats on a baking sheet and place in the preheated oven. Bake for 30-40 minutes, stirring occasionally. When the oats are golden brown, remove them from the oven and let them cool.

Make the Pumpkin Mix: In a small bowl, combine the pumpkin, a teaspoon of honey, pumpkin pie spice, and cinnamon. Whisk to mix. It tastes like pumpkin pie mix!
Assembly: Use an 8-ounce cup to make the Greek yogurt parfait. Start by adding a layer of granola to the bottom of each bowl.
