No Brine Smoked Turkey Recipe – Easy No Brine Turkey Recipe – a juicy and perfectly seasoned and cooked whole turkey that does not need to be preserved wet or dry. Easy to make, perfect for Thanksgiving, Christmas and NYE.
For over 15 years, since I made my first turkey, I have soaked or dried every turkey I cooked. I’ve always known that cooking a whole turkey is no fun, so I never jumped at the chance to skip the brining.

But as we all know, wet brine required a large container filled with water in which to store the brined turkey. You need more fridge space, which can be a problem, especially if you’re hosting a holiday party.

When dry brining (see my Dry Brined Herb Roast Turkey), you still have to refrigerate a raw turkey covered in salt, which is no fun. While both situations are “doable”, this time I decided to roast the turkey without braising. And it turned out amazing! Follow the instructions and pay attention to the other tips I share below.
We don’t just salt turkey, whole chicken, chicken or turkey breast (or any kind of meat) can be marinated.
When you add the turkey, it will be extra juicy and tender. During brining, the turkey absorbs excess moisture from the brine. This also makes it salty and spicy, as brine is usually made with salt and water.

The brining process involves soaking the turkey in a saline solution before cooking. It’s a great choice for home cooks and ensures that the turkey stays moist after cooking.
But is it really mandatory to marinate the turkey before cooking? The short answer is no. You can do without the pickle, but you have to do a few extra steps.

Rinse and pat dry the turkey. (Rinsing of raw poultry is optional, as splashes, if left uncleaned from sinks and kitchen surfaces, carry the risk of salmonella).
Prepare the compound butter. This is really softened (salted or unsalted) butter that is mixed with salt, pepper, lemon juice, dry or fresh herbs, garlic and lemon juice.
You are a turkey with butter. Be sure to separate the skin from the breasts and add a little melted butter underneath. Reserve about 1/5 of the folded butter.
Easy Turkey Dry Brine Recipe
Stuff the turkey cavity with onions, carrots, orange wedges, celery ribs, apple wedges and fresh herbs (thyme, rosemary, sage and parsley).
Reduce the oven temperature to 350 F (177 C) and roast for an additional 2-3 hours until a thermometer inserted into the turkey legs reads 165 F (74 C).
You can baste the turkey with the pan (or chicken stock) every 30 minutes. Keep in mind that the longer you leave the oven door open, the longer it will take for the turkey to cook.
Smoked Thanksgiving Turkey
Check the temperature again and if it is below 74C, cook for another 30 minutes.
Then cover with buttered cheese (or aluminum foil), reduce oven temperature to 350F, and bake for another 2-3 hours until a thermometer inserted into the legs reads 165F.
In this case it took about 2 hours and 15 minutes. The size of the oven, the type of pan are also factors that can speed up or slow down the cooking process.
Traeger Smoked Turkey
Bake 13 minutes per pound at 350°F for an unstuffed turkey or 15 minutes per pound for a stuffed turkey.
When cooking a whole turkey, plan on 1 to 1 1/2 pounds of raw (uncooked) turkey per person. That way you have enough meat and some leftovers.
I am currently in Europe and my beautiful Miele oven (4.63 cu. ft.) is slightly smaller than my GE gas oven (5.8 cu. ft.) in the US.

A Foolproof Turkey Recipe For Thanksgiving
You see, I really like how juicy and tender this recipe is, so I don’t recommend going below 275. Lower cooking would take a long time.
The trick is to use two different cooking times, 275 and 350. If you’re wondering how long it takes to smoke a turkey exactly, because it’s short, my version is highly recommended because it smokes the turkey taller. temp cooks very quickly. And you don’t have to solo the turkey either.
I use the two pan method for smoking turkey. I smoke the turkeys directly on the grill, with a large roasting pan under the grill to catch the drips. And another pan next to the turkey on the rack with water to add moisture. Similar to my smoked pork recipe.

Food safety experts recommend choosing turkeys under 12 pounds for smoking. This keeps them at a safe temperature. People smoke larger whole turkeys even though they risk staying in the “danger zone” of 40°F and 140°F for a dangerous amount of time.
In this example, we are smoking a whole 11 pound turkey. Total smoking time on the Traeger was about 3.5-4 hours until the Meater thermometer read 165 degrees F.
So the time will vary by weight, and you’ll need to start smoking them at 275 degrees for the first two hours, then raise the temperature to 350 and smoke until the internal temperature of the turkey leg reaches 165 degrees F (or 160 if you’ve given it time to resting and reaching temperature).
How To Smoke A Turkey For Thanksgiving
We usually put it in two places: the thick part of the turkey breast and also the thigh (we avoid the bone). We usually pull the turkey out of the smoker at around 160 degrees F, as measured in the thigh, then cover it and let it come up to temperature, which is usually around 165 F.
For food safety reasons, do not smoke a frozen turkey. Definitely a fresh turkey smoker. Defrost the turkey according to the chart below. (although you can sous vide a frozen turkey breast if you’re up to it)
