These pumpkin pie crumble bars are a cross between pumpkin pie and my coffee cake. The creamy pumpkin filling pairs perfectly with the buttery crust and filling. They make a great, easy, no-fuss Thanksgiving dessert or just a treat with a cup of coffee. I make them for almost all of our fall gatherings and holiday parties. Everyone loves them!

These pumpkin bars can be made ahead and refrigerated for up to 3 days until ready to serve. If you want to freeze them, wrap them tightly in plastic wrap and place them in a ziploc bag that will be stored in the freezer. Store in the refrigerator for up to 3 months.

Leftovers should be covered with plastic wrap and refrigerated. Let them sit at room temperature for 20 minutes before serving.

If you don’t have pumpkin pie mix on hand, mix the pumpkin puree with ½ cup granulated sugar and 1.5 teaspoons pumpkin pie spice mix.
