Similar to all my other pound cake recipes on this site like Chocolate Pound Cake, Lemon Pound Cake, Matcha Pound Cake, and Earl Gray Pound Cake to name a few, this Pumpkin Pound Cake recipe keeps its name and keeps the ratio of these 4 ingredients intact.

For the pumpkin and spice flavor, fresh pumpkin puree is added along with the aromatic pumpkin spices. The resulting cake has the same texture as a base cake with the addition of a delicious pumpkin flavor and aroma of pumpkin spice. Step 1: Prepare the cake pan. Lubricate it with oil or butter and sprinkle it with flour (picture 1). Preheat the oven.

Step 2: Measure butter and brown sugar into a large bowl. Bake both until light and fluffy with an electric mixer on medium speed (picture 2). Scrape the sides and bottom of the bowl halfway.

Step 3: Beat the eggs into the cream mixture, one at a time (picture 3). Beat each time until all traces of the eggs are no longer visible and not too stiff (picture 4). Scrape the sides and bottom of the bowl again to ensure all ingredients are well mixed.

Note: Make sure the eggs are at room temperature. Cold eggs can cause the cookie dough to harden.

Step 4: Add the pumpkin puree (picture 5) and whisk until well combined with the cream mixture (picture 6).

Step 5: Measure the flour, baking powder, salt and pumpkin spice into a medium bowl. Mix them together with a hand mixer (picture 7) and strain into the cream mixture. Fold with a spatula until all traces of flour are no longer visible (picture 8).

Scrape the bowl after each batch to ensure the ingredients are well combined and the dough is smooth. Do not over mix.

Note: You can also use an electric mixer to mix in the flour. Use a very low speed and do not over mix to avoid the cake becoming hard.

Step 6: Pour the cake batter into the prepared pan and smooth the top (picture 9). Bake the cake for 45 to 50 minutes (until a skewer in the center comes out without wet dough sticking to it). Remove the cake from the oven and let the cake cool in the tin for a few minutes before transferring it to a wire rack to cool completely (picture 10).

Note: Store the cake with a kitchen towel as it cools. Wrap in plastic wrap and refrigerate as soon as it cools to room temperature to lock in its moisture. Keep the cake cold until it is completely cold.

Step 7: To make the cream cheese frosting, measure the cream cheese and butter into a mixing bowl. Beat until the ingredients are well combined, smooth and creamy (pictures 11 and 12).

Note: Make sure the cream cheese and butter are at room temperature. Cold ingredients will take much longer to crush.

Step 8: Sift the granulated sugar. Add it to the cream mixture and mix lightly with a spatula to moisten it before using the electric mixer to whip it. This prevents the sugar from flying everywhere (pictures 13 and 14).

Step 10: To frost the cake, place it on a cake board or cake plate. Cover the cake with the frosting evenly but not necessarily soft (picture 15).

Step 11: Divide the remaining frosting into 3 bowls with 2 of the bowls having slightly more frosting than the third. Color the first two bowls of frosting with orange and yellow food coloring (image 17). Color the cream in the third bowl green. Transfer the frosting to each piping bag (photo 18).

Step 12: Spread a row of orange stars (orange pumpkin) on the cake with tip 865 and then yellow stars (yellow pumpkin) with the same tip (image 19). For each pumpkin, add a small green stem in a green glass with a star tip 16 (image 20).

Step 13: Using the same green icing, pipe small tendrils with a circular tip 2, followed by leaves with a tip 67 (pictures 21 and 22).

Step 14: To make the smaller pumpkins orange and yellow, use star tip 21 (image 23). Top each star with a small green dot of icing using a round tip 2 (picture 24).
