So I took the pumpkin home like I had just won the lottery and stood in the kitchen wondering what to do with it. Of course, it had to be special because, well, butternut squash! (Could a name be cuter? I don’t think so.)

Note that I like my soups thick, so this video of this Fall Pumpkin Soup shows a thicker result than what Panera usually offers. Feel free to thin the soup a bit with extra stock and a touch of cream in the blender for a thinner, smoother result, like I did with the photos in this post.
