Mashed Sweet Potatoes With Bourbon Praline Sauce
Cooking: Preheat the oven to 400°F Wash and peel the sweet potato, then pierce it several times with a fork. Place sweet potatoes on a foil-lined baking sheet and bake for 45-60 minutes or until tender and easily pierced with a fork or knife. Once the sweet potatoes are cool enough to handle, cut them in half and place them in a large bowl and scoop out the flesh.
Boil: Wash and peel sweet potatoes, then peel and cut into large 1- to 2-inch pieces. Add the potatoes to a large pot of boiling water and cook for about 15 minutes or until fork-tender.
