STEP ONE: Preheat oven to 350F. Spray a 1-quart baking dish with cooking spray and set aside.

Then strain the sweet potatoes. You may want to reserve some syrup in case the pan seems dry, but this is optional. I like to mash the sweet potatoes a bit first with a potato masher or a hand mixer.
