Marinating is the process of immersing meat in a salty and spicy mixture long enough to allow the flavor of the brine to penetrate into the meat, adding moisture and flavor. Since turkey is a lean meat, it can become dry and tough if cooked too long. Brining your turkey ensures extra moisture, keeping it juicy and giving it a long-lasting flavor when cooked.

You should brine the turkey at least overnight, but the longer the turkey sits in the brine, the less predictable the flavor will be. If you have time, brine the turkey for up to 24 hours, which will add the most moisture and flavor to your main dish.

To make a turkey brine, you’ll need plenty of water, brown sugar, fruit, garlic, and plenty of fresh herbs. In our recipe we chose to use orange, lemon, rosemary, sage, bay leaf, black pepper and allspice. Our fall herb blend creates a cozy holiday feel, while two kinds of citrus add a welcome sparkle. Feel free to use your own fresh herbs and desired seasonings to find your ideal combination.

Tip: You can make the brine up to two days in advance and store it in the refrigerator until ready to use.

You’ll want something large enough to hold the turkey and seasoned brine without the risk of spillage. We recommend using a large stockpot, but if you don’t have a large enough stockpot, you can also use a large cooler or bucket.

We recommend cooking only fresh turkey or thawed turkey, but if you’re really in a pinch you can defrost it while brining it. However, be prepared for the brine to take a long time to thaw – up to two days.

A rule of thumb for turkey brine is 1 teaspoon salt per cup of water (i.e. 1 cup of kosher salt to 16 cups (1 gallon) of water). From there, you can scale it up or down and add apple juice or cider and seasonings.

The only two 100% essential ingredients in a wet turkey brine are water and salt, but if you only use those two ingredients, you’re missing out on the opportunity to add even more flavor to your turkey.

Should I Brine My Chicken?

Instead of just water, I make the turkey brine with cider or apple juice, then add whole spices, citrus, vanilla, and brown sugar.

There are two main brands of kosher salt on the market, Morton and Diamond Crystal. I made this recipe using Morton’s recipe which is more versatile.

Morton’s crystals are smaller, so there’s more in each piece. If you prefer to use Diamond Crystal instead of Morton, add an additional 1 ½ teaspoons of Diamond Crystal Kosher Salt to each tablespoon of Morton Kosher Salt.

If you have other herbs on hand, feel free to toss them in place of or alongside the rosemary: sage and thyme are also great with turkey.

While you can’t reuse any of the turkey brine mixture that came into contact with the turkey, you can save the excess liquid in the stockpot. Use the brine for more turkey (try turkey breast) or other meats (such as those listed above), or freeze for later use.

After brining the turkey, it’s important to wash it carefully. First, make sure to wash your hands thoroughly and frequently throughout the process. Next, after rinsing the turkey, you should scrub the sink with very hot water and plenty of soap. If turkey spills on the countertop, be sure to disinfect it with a disinfectant cleaner. Your salt water bucket needs to be thoroughly cleaned with hot water, plenty of soap, and a scrubbing sponge.

While you need to rinse off the turkey’s wet brine after eating it, do not rinse the turkey before brining it. Flushing does not effectively remove bacteria; instead, it is more likely to spread.
