If you’re wondering how to make holiday cookies and how mint is baked into the dough, read on! It’s actually easier than expected! All you need is a tree cutter (or shape of your choice), 1 small round knife (1 inch diameter), peppermint pieces, and royal icing! To make this peppermint tree, I used the stained glass cookie technique and replaced the fun candies/candies with peppermint pieces.

Cut the dough into Christmas trees and then cut small circles into the tree. Gently break the mint to about 1/4 inch in size. Fill the round cutouts with mint pieces until the red candy stripes are visible. Bake cookies according to instructions. After about 3 minutes, you’ll notice the candy melting, and after 4 minutes, the mint will completely soften into the prepared batter, resulting in a shiny and festive finish. It is so simple! Just make sure you don’t overcook the cupcake to maintain its color since it’s not completely covered in royal icing.

I took 10-inch cookies out of the oven in exactly 5 minutes, but keep in mind that smaller cookies will take about 1 minute less to bake. *Do not use cinnamon candies as they will bubble and expand when melted.

Using the bottom of the cutter, cut 10 1-inch circles of dough from a large tree-shaped cookie.

Fill the empty circles on the tree with mint candy pieces, leaving mint stripes on top.

Bake 10-inch cookies or brownies on a baking sheet lined with parchment paper for about 5 minutes. After 3 minutes, you will notice that the mint begins to melt into the dough. After 4-5 minutes, the candies should completely melt and become smooth, forming a shiny and decorative surface. (Remove from oven until golden brown)

The glaze will be very thick. Add warm water a few drops at a time until the frosting reaches the consistency of toothpaste. This is for the pipe. Spoon half of the toothpaste-like frosting into a piping bag fitted with a Wilton 4B tip. The seal is closed.

Color the second half of the thick royal icing with a few drops of pink food coloring, mixing until smooth. Transfer the thick pink frosting into a piping bag without a star tip (16) and seal.
