I love a good breakfast casserole or an easy frittata when we’re hosting the holidays, but not everyone likes or can eat eggs, so I set out to create an eggless casserole that deserves a centerpiece on the brunch table. . This is a great springtime choice when planning your Easter brunch recipes.
For this casserole you will need to boil the potatoes. Peeling and chopping potatoes, then boiling them for a few minutes softens them. At this point gather your sauce ingredients.
You make a simple (but super-tasty) cream sauce-like sauce flavored with garlic and onion, smoked paprika and mustard, and a little parsley. Gravy starts as the stuffing for this turkey pie. You mix it all together with a little butter and flour to thicken it and use milk as a liquid. It is very simple.

Now all you have to do is mix it all up and bake. Here are precooked and drained potatoes, ham, and cheese:
Mix everything with the creamy sauce (pour everything well into a greased pan). Any 3–4 quart pan will work, such as a 9×13 inch pan. I use a 4 liter round pan.
Cover and bake the casserole, when it’s almost done, sprinkle with cheese and return to the oven uncovered. (What’s a casserole without a little cheese on top?!) You know the casserole is ready when the cheese is melted and bubbling all over.

If you’re serving this casserole for brunch, it goes well with fresh fruit, eggs, bacon or sausage, smoked salmon, slow cooker cinnamon rolls, or whole wheat blueberry pancakes. (None of these require an oven!)
