Homemade Turkey Brine For Smoking
When I have my family and friends over for the holidays, I always come across a problem: there is not enough space in the oven! I solved this problem by cooking my turkey in a toaster oven. For every smoked turkey, you need smoked turkey brine. This brine is easy to make and adds lots of flavor and moisture to your bird.
How To Brine A Turkey + Easiest Turkey Brine Recipe
This recipe has ingredients that are easy to find in the supermarket such as salt, brown sugar, apple juice, garlic, pepper, orange, fresh parsley and fresh rosemary.
Place all ingredients in a large pan and bring everything to a boil. Cook for a few minutes until all the salt and sugar dissolve into the liquid. Remove the brine from the heat and cool to room temperature. Place the turkey in the brine and refrigerate and, after drying, proceed with smoking the turkey.
I highly recommend that you brine your turkey before smoking. The brine does two things: it adds flavor to the turkey and it adds moisture. This extra moisture helps keep the turkey from drying out while smoking.
Smoked Turkey Recipe (with An Easy Dry Brine)
A brined turkey no longer takes longer to smoke. In my experience, I’ve found that brined turkey generally cooks at the same rate as an unsalted turkey, or sometimes even faster.
It’s best to brine a turkey for at least 18 hours. That being said, I like to brine for 24 hours whenever possible. I don’t recommend soaking the turkey for more than 24 hours because it can become too salty.
This brine is great as is, but you can add other ingredients you have on hand to customize it to your tastes.

5 star review “First time smoking a turkey and I would never have it any other way! It’s so thick and cold. Thank you!” -Abby
I like to brine mine overnight, but it’s important to brine it for at least 12 hours before cooking. The longer it’s brined, the longer the flavors will have to marinate together to create a delicious, juicy turkey. You can leave it in brine for 3 days.
Of course, just make sure it’s a little too far. Edible turkeys take more than 30 minutes to cook than those that are not.
How To Brine
The materials contain some heat and moisture, which causes a difference in how heat circulates throughout. I would only add an extra 30 minutes to the cooking time, so about 3 to 3 1/2 hours.
In fact, cook a little faster. Because it has more moisture, it cooks faster if it is not salted. I usually cook mine for around 2 and a half to 3 hours, however, this time may vary slightly depending on your oven.
To ensure it is cooked perfectly, check the temperature regularly with a meat thermometer (insert it into the thickest part of the thigh). It will cook when the temperature reaches 180°F.

Cold brine is the liquid mixture that the turkey will be submerged in to marinate. There will always be salt, water and sugar. A dry brine is rubbed directly onto the turkey, providing flavor along the way. Both are great ways to add flavor to your meat!
