Katie Lee Sweet Potato Casserole – Sweet Potato Casserole is beloved (by some) as a classic holiday recipe. Honestly, I like the regular baked sweet potato type, but since some of our extended family likes the marshmallow type, I decided to make a healthier version.
Sweet Potatoes To make the Sweet Potato Casserole, you need cooked sweet potatoes. If I’m making a casserole for a crowd, I like to roast them beforehand so I don’t have too much to do on the day of cooking.

Most sweet potato recipes include sugar mixed into the sweet potato. I do not accept this advice! Sweet potatoes are already sweet enough, so no need to add more sugar! Some recipes add eggs and milk, but they don’t change the taste or texture and are allergenic for some, so I leave them out.

If you make a portion of the sweet potato casserole ahead of time, be sure to reheat it before adding the topping.
Sweet potato casseroles are usually filled with something sweet, like marshmallows or strudel. I make my own marshmallows and I found that if I reduced the amount of gelatin in the recipe I could make the marshmallows fluffier. (Mom Hack: The Marshmallow App also makes coconut flour cake icing for kids’ birthdays!)

Another option is to make a Swiss meringue with egg whites and honey. Heat and stir in a double boiler until thick and fluffy. If you’re really fancy, you can even pipe the finished meringue into a piping bag and pipe a pretty design on the sweet potato. As a final step, tap the casserole for a few minutes before serving to slightly brown the meringue.
It’s important to make sure the sweet potatoes are nice and warm since the casserole will be in the oven for a minute or two.
