It consists of a Thanksgiving turkey, dressing or stuffing, a side of vegetables, a fried (or scrambled) egg, and a drizzle of gravy.
Seriously, it’s so good, it’s what I’ve been eating for breakfast for the past few years and I’m not stopping anytime soon!
It’s just Thanksgiving for my family and my parents, and while my mom and I are sure to be cooking up a storm, we seem to go through all of this food quickly.
Leftover Turkey Recipes That Take Under An Hour
I love making this easy 15-minute Turkey Noodle Soup and Creamy Turkey Artichoke Casserole. I substituted ground turkey for leftover turkey from my mother-in-law’s white turkey stew.

Not to mention I could have eaten this big breakfast for DAYS, but after the second day we tore through the leftovers. (So I sometimes switch to this ham breakfast, eh!)

I know, I know, we eat so much at Thanksgiving, and a big breakfast seems a little crazy.
After an early Thanksgiving dinner and a low-key evening with my family, I found myself pretty hungry the next morning. I mean, that’s a lot of hours without food. ♀️

One last thing… I love scrambled eggs and I usually make this Thanksgiving breakfast.
Once you’ve cut the egg yolk, it’s covered all over and mixed with the sauce, well, you can’t beat that!
Low Carb Leftover Turkey Recipes
I used two eggs and soaked them in a small bowl. Then add the rest of the ingredients to the pan after heating and cook until soft, then chop into small pieces.
Of course, some snacks will bring this Thanksgiving breakfast to life.

P.S. What to eat for lunch? This Thanksgiving Turkey Celery Cream Cheese Sandwich is killer, and it’s like a turkey open melt with spinach and mushrooms. Or make turkey stuffing!
Turkey: Be sure to cut your turkey into small pieces so you get a little bit in each bite.
Dressing: 1/2 cup will be needed for leftover dressing or filling. I think a bread-based filling works best here (even a cornbread dressing), but if you’ve made something rice-based, that’s fine too.

Vegetables: I like to add leftover Brussels sprouts to the vegetables in this hash. If you don’t want to do this, you can add some fresh spinach, use leftover green beans, or skip the vegetarian option.
Mustard: The sauce really takes over and brings the different parts together. Also, it prevents the onion from drying out. Add sauce of course!
Eggs: I like scrambled eggs, but you can also scramble a few eggs to make a hash. You know your family takes Thanksgiving seriously when you plan leftovers in detail. Let’s start with breakfast: leftover cakes.
Creamy Leftover Turkey Casserole Recipe
They seem especially perfect for Thanksgiving leftovers because, like the Thanksgiving meal itself, the recipe’s volume is greater than its portions. (Here are some of my favorite Thanksgiving side dish recipes.)
Separately, the components themselves are quite nice: delicious herb gooey cheese; All intents and purposes are scrambled eggs, but together they do something more meaningful.

Stuffed cakes (or my stuffed muffins) are great with eggs alone, but I think they’re great piled high with a few slices of bacon, spinach, or some leftover gravy to compliment the sausage and biscuits.
The flavor of these leftover cakes will vary based on your family’s (and therefore leftover) recipe, but I can’t imagine a combination of these.
Turkey Breakfast Burritos Recipe
While filling recipes like these Crockpot Wild Rice Pancakes are delicious, they don’t lend themselves well to cake fillings because they don’t fry or hold their shape, and are based on traditional bread.
It’s possible. I haven’t tried the cake filling with gluten free bread, but I think it would work. If you try it, let me know your results.
Topping the cake with a poached egg is completely optional. The beaten egg is mixed with the remaining filling to hold the shape of the cakes. Another related ingredient you can try is flaxseed.
