Whenever delicata squash is served at my Shabbat table, someone inevitably asks me what it is. I explain it like this: “This is what happens when a butternut squash meets a sweet potato. You get all the flavor of tender, thick, sweet meat with the healthy low-carb benefits of the former. Now, I’m no Rory, but you can follow me for healthy eating advice at your own risk. Fill it with a delicious spicy ground beef, you have a beautiful appetizer, side or main course. If you ask me, we should do more vegetable shidduchim. 3. Mix salt, chili powder, red chili flakes and cumin. Remove a teaspoon of this mixture and mix it with a tablespoon of oil (you can double the mixture and use it at the end as an alternative). Rub the oil-spice mixture onto the squash. Place cut side up on a baking sheet and bake for 20-30 minutes until almost soft. (Exact time depends on how thick-skinned your squash is.)
5. Heat two tablespoons of oil in a frying pan and add the meat mixture. Add tomato puree and sauce. Fry until the meat is browned but not completely cooked through, about 10-15 minutes.

6. Remove the squash from the oven and fill the hollow holes with the meat mixture. Return the stuffed squash to the pan. Cover and bake for another 20 minutes.
Notes: Optional: Before serving, top squash boats with caramelized onions and masala oil. (See what I wrote above about doubling.)

It has a little sweetness from the butternut squash. Then the beef mixture adds some flavor and a touch of spice. Finally, the sauce brings everything together with some sweetness, flavor and acidity.

This stuffed squash may look fancy, but it’s super easy to make and only requires a handful of ingredients you may already have in your pantry or fridge. Butternut squash is a nutritious winter squash and a great addition to one’s diet. It contains vitamins and minerals including vitamin A, vitamin C, potassium and manganese. It’s high in calories and high in fiber, with 54 calories and 4 grams of fiber per cup.
It’s not an ETG meal without some kind of sauce, and I’m totally obsessed with this cinnamon tahini sauce. I know what you’re thinking – why would I want to put that on my beef? But you won’t regret it! It’s sweet and spicy with a bit of acidity, a perfect balance to the beef and butternut squash.
Mix all ingredients in a small glass or bowl and mix well. You can add more water if you want a thinner consistency. You want to drizzle it over the squash.
Roasted Delicata Squash (so Easy!)
Butternut squash has a thick, sometimes waxy skin. When cooked, it becomes much softer and more tender. Technically, the skin of all winter squash is edible, but some are preferred over others (the smaller the squash, the softer the skin and easier to eat). Although you can eat the skin of butternut squash, it’s best to scoop out the flesh and leave the skin on when eating these stuffed butternut squash.

Delicata squash is a naturally sweet winter squash that has a wonderfully creamy texture. It contains fiber, potassium and complex carbohydrates, making it a wonderful vegetable to balance a protein-rich diet.
…what are we doing here! This stuffed delicata squash recipe features ground beef sautéed with onions, garlic, Italian seasoning, pecans and cranberries for a very easy and complete meal.
Start by roasting the delicata squash. To do this, preheat the oven to 350 degrees F and trim the ends of each squash.
Delicata Squash With Caramelized Onion, Beef & Bacon Stuffing {paleo, Whole30}
Cut them in half lengthwise, drizzle with avocado oil and sprinkle with sea salt. Place the squash cut side down on a baking sheet and bake for 30 to 40 minutes, until the squash is nice and tender. You should be able to press the meat easily.
Heat the avocado oil in a large frying pan over medium-high and add the chopped onion. Cook, stirring occasionally, until tender and fragrant, about 5 minutes.
Place the ground beef in the hot pan. Let it brown for 3 to 4 minutes before flipping it to the other side and browning for another 3 to 4 minutes.
