Lentil soup is a great way to use up leftovers from the holiday table, because you don’t have to worry about reheating meat that gets too hot in hot soup. And it’s great to have a steaming soup in the kitchen when it’s cold this time of year!

Choose any meat that is lean, and any cut that works as a steak is more than 100 g per person. There are 2 ways to do this:

Wash the shallots and put them in a large pan. Cover with cold water and simmer for 1.5 hours, skimming off the leftovers as needed. (You can prepare roasted garlic in between.)

After 1.5 hours, add the onion, garlic, pepper, black pepper and any other spices you have added. Simmer for another 1-1.5 hours.

Use a fine mesh strainer to fish all the bones and flavors out of the soup. At this point if it reduces too much and you have less liquid than you need, you can add more water to increase the volume. Season with fish sauce, soy sauce and sugar, then season to taste.

Chop 1 head of garlic and put it in a small bowl or pan. Add enough neutral flavored oil to cover the garlic, then cook over low heat (simmer gently) until the garlic is golden, which will slow down the browning considerably. Be careful that the garlic does not brown too much or become bitter. Remove the garlic from the oil. You can store them in an airtight container in the refrigerator for several weeks. Use it in noodle soup or any dish that could use some extra garlic flavor!

Soak the rice noodles in room temperature water for 15-20 minutes or until the noodles are soft and tender. Meanwhile, thinly slice the beef and gather all your ingredients.

Bring a large pot to a boil. In the meantime, heat the soup.

* If I make several bowls of lentil soup, it’s easier to separate and drain them one by one when the lentils aren’t fried, because it only takes 5 seconds instead of separating the hot, cooked noodles.

Place a portion of the noodles and soy sauce in a metal strainer or Asian-style noodle strainer into the rapidly boiling water and blanch for about 5 seconds. If you’re using larger noodles, or if you’ve washed your noodles and they’re still a little firm, you’ll need to cook them longer. Remove from water, drain as much water as possible and transfer starch to a serving bowl. Repeat with the remaining sections.

Today, I’m going to show you how to make it a habit and make a super hearty bowl of noodles that takes less than 20 minutes to assemble.

Because the broth in this roast beef soup is so rich, you only need a few ingredients to make a great noodle soup base. I used water in my recipe, but if you prefer a richer soup, replace it with chicken or beef stock.

You can use many types of noodles in this dish. Personally, I always stick to wheat noodles made with flour and water.

If you prefer a coarse noodle texture, you can use wide noodles such as fried noodles or udon.

Standard cooked beef noodle soup usually uses medium round noodles, so the noodles can soak up the soup for a flavorful result while still retaining some of their chewy texture. For this purpose, you can find noodles labeled as “Yang Chun Noodles” or “Dan Dan Noodles”.

I personally like to use the thin version of the soup because it hides a lot of the flavor. For thin noodles, you can use dragon (Hanxi) or some (Japanese) noodles.

Finally, if you can’t find fresh noodles, any kind of dried wheat noodles or instant noodles will work.

Almost all traditional Chinese noodle soup recipes call for the noodles to be cooked in a separate pot directly in the soup pot. Because of that:

By the way, if you are feeling too lazy, use instant noodles to make this beef soup. To save time and reduce cleanup, make 2 batches of instant noodles for the noodle soup. The instant noodles are already partially cooked, so you can make a cover when needed.

My homemade meatloaf is completely different from the traditional version, it is softer.
