Cottage cheese is making a comeback and I’m definitely here for it. And I don’t want to brag, but I never got off the cottage cheese train. It’s always been the dairy product I’ve used to fuel myself and my kids (hello protein and calcium), but I’m happy to see cottage cheese getting the benefits it deserves. Online you can find it in cakes, ice cream (haven’t tried it yet but stay tuned) and pasta (today!).
The benefits of our strained paste are varied. Firstly, the minimal ingredient list means this pasta is not only easy to make, but also very affordable. Second, the use of Vegetable Cottage Cheese from our favorite dairy brand (AE Dairy) (more on that later) adds great flavor. Third, the same cottage cheese adds creaminess and lots of protein to every bite, without the addition of cream or meat. Finally, it tastes really delicious.

Tomato. I’m obsessed with little sugar bomb cherry tomatoes, but since we’re roasting tomatoes, any cherry or grape tomatoes will work.
Asparagus. Is there a spring ingredient more synonymous with asparagus? I considered shaving the asparagus spears to get nice long strips all over the pasta, but ultimately decided that smaller pieces worked better for this.
Pappardelle. I’m obsessed with thick pappardelle noodles. Even a year or two ago you had to get these wide egg noodles from specialty food stores, but today you can find them in most grocery stores selling small egg noodles.

Cottage cheese. As the name suggests, the most important part of our cottage cheese pasta is of course the cottage cheese. But today we don’t use ordinary cottage cheese. We used Mr. Garden Vegetable Cottage Cheese. E. Incredibly delicious cottage cheese (made by AE Dairy) is packed with aromas of tomatoes, garlic, onions, carrots, celery and bell peppers. It’s reminiscent of a vegan cream cheese spread, but in cottage cheese form and I can’t get enough of it. If you can find it at your local grocery store, buy it now.

Prepare pasta water. Bring water to a boil in a large saucepan. Season to taste with salt. It tastes salty like sea water. I know it sounds like a lot, but it’s the only way to flavor the inside of the pasta.
Chicken Alfredo Stuffed Shells With Cottage Cheese
Cook the vegetables. Heat a large, high-sided skillet over medium-high heat. When the pan is hot, add the olive oil. Swirl pan to coat. Add the cherry tomatoes and season with a pinch of salt. Use a wooden spoon to drop the tomatoes into the oil. Let it rise by stirring every few minutes. When the skin starts to swell, break up the tomatoes using the back of a wooden spoon. This is the part you need to pay attention to. Tomatoes obviously get hot, which heats up the juices inside, so sometimes when you crush them, the juice comes out quite a lot and you have to be careful.
Cook the pasta. Pappardelle usually doesn’t take long to cook, so it’s best not to cook it too early. Just before cooking the asparagus, place the pasta in boiling water. Use tongs to gently loosen the noodles and make sure they don’t stick together while cooking.
Cook the asparagus. Add the asparagus to the pan with more salt. Stir in tomatoes to coat. Cook the asparagus with tomatoes for 3-4 minutes until the asparagus turns bright green. Add garlic, cook again for a minute until the garlic smell disappears.

To throw! When the pasta is almost al dente, use tongs to transfer the cooked pasta to the tomato and asparagus mixture. DO NOT drain the pasta water. Spoon the cottage cheese over the pasta with a little of the floured pasta water. Use tongs or a serving spoon to gently stir together the pasta, vegetables and cottage cheese.
I’m not a dietitian but I would say yes? The only questionable ingredient is pappardelle, but you can substitute whole wheat pasta if necessary.
