Step 1: Mash the chicken. Pat the chicken breasts dry with paper towels. Using a meat mallet or the bottom of a heavy skillet, pound the chicken to a uniform thickness.
Step 2: Make the bread. Add the flour and seasoned salt to a resealable bag. Shake the bag to combine.
Step 3: Bread the chicken. One at a time, add the chicken breasts to the bag and toss to coat them in the seasoned flour. Shake off excess and set aside on a clean plate.

Step 4: Brown the chicken. In a large non-stick skillet, heat the butter and olive oil over medium heat until melted. Add the breaded chicken breasts to the pan and cook until lightly browned on one side (about 4 minutes).
Step 5: Add garlic and onion. Flip each breast and cook for one minute on the other side. Next, add garlic and onion to the pan. Continue cooking, stirring occasionally, until the onions are soft and fragrant and the chicken is lightly browned on both sides (but not cooked through).
Step 6: Add Cranberry-Orange Sauce. In a small bowl, combine the chicken broth with the orange juice and then add the mixture to the pan to deglaze. Add the cranberry sauce and paprika and mix everything well.

Step 7: Cook the chicken thoroughly. Reduce heat to low, cover and simmer until chicken is cooked through (about 20 minutes or until chicken reaches an internal temperature of 165 degrees F).
Step 8: Thicken the Cranberry-Orange Sauce. If you prefer a thicker sauce, uncover the pan after the chicken is cooked, increase the heat to medium and let it cook until the sauce thickens (about 2 or 3 minutes more). Garnish with fresh parsley (optional) and enjoy!

Recipes with the fewest ingredients are sometimes the best kind of recipes. They’re perfect for those busy days when you can’t tackle a complicated dinner (or making dinner at all).
I’m not one to make many recipes with pre-packaged ingredients, but this recipe is good, so I don’t worry too much about it. No one will judge you for using its container or its jar. And if they do, you shouldn’t feed them!!
I like to serve this chicken over rice with cranberries. There is a lot of sauce, so you can spoon it on and let the rice absorb it too. This chicken is good for leftovers, so don’t worry if you don’t have six people to feed. Enjoy!
