Third, there will never be canned soup with my green beans*. Not on Thanksgiving, not on Christmas, not ever. Creamy mushroom sauce is easy to make, it tastes better and for the cherries on top – it’s completely free of artificial ingredients.

* For the innocents reading this, there are plenty of quick and easy recipes “out there” that don’t involve much more than pouring canned mushroom soup, canned green beans, and canned fried onions into a baking dish.

And that, my friends, is all I have to say about Green Bean Casserole! This recipe has been around for a long time, probably since my early 20s when I had it at one of the first Thanksgiving celebrations I attended here in Sydney (and I’ll never reveal how old it was, a woman’s age should remain a secret, always !).

Ahh, memories of the turkey that wouldn’t fit in the tiny apartment oven, the weird bumpy pumpkin pie, and the dry homemade rolls that were my feasting offerings. We spit out the turkey, bought the rolls, and saved the pie by slicing it up and serving it as a sundae with cream and ice cream (yikes!).

1. Panko bread – larger pieces than regular bread, so you get much more filling CRUNCH! Asian aisle of most supermarkets these days, but cheaper in Asian stores.

2. Oil – any high temperature, neutral flavored oil is good here. Do not use olive oil (low smoke point).

4. The shape of the dish – it is better to use one that is shallow rather than deep to maximize the surface area for crispy onions! An ideal large pot, the 9×13″ / 23 x 33″ glass bowl is oversized.

5. The onion browns too quickly – reduce the oven, cover with foil for the remaining baking time. Then remove the foil for the last few minutes to crisp up the onions. That’s why it’s important to fry the onions only until LIGHT golden – so they’re deep golden and crispy when they’re baked!

6. Make ahead – the best way: cook the beans and make the sauce according to the recipe. Cover the sauce immediately, refrigerate, then both in the fridge for up to 3 days (possibly longer, I only did it for 3 days). Onions fried the day before, cool completely before putting them in the dish. Not refrigerators! On the day of, mix the beans with the sauce, place in a baking dish, COVER and bake for 10 to 15 minutes to warm through. Remove the lid, add the onion, then bake for 10 minutes until the onion becomes crispy and golden!

8. Serving size – really depends on how many other pages you have! Conservatively, this will easily serve 8 – 12 with say 3 or 4 other options (ie a large bowl per person). If this was the only vegetable side, I’d say it serves 5 people (150g / 5oz beans per person).

It serves 8 people, assuming the onions used for the dressing have 2 tablespoons of oil, which I think is a reasonable estimate (allowed onions don’t absorb oil).

Cook green beans for 5 minutes. Drain, rinse with cold water and set aside. Sauté mushrooms and garlic in butter.

Add Parmesan cheese, half of the cheddar and half of the crispy fried onions. Stir to combine. Transfer to a lightly greased baking dish.

Cheese Pro Tips: Melt/grate block cheese, as it melts and tastes better than packaged cheese. I use Cracker Barrel Sharp Yellow and Belgioioso parmesan cheese. Baking Soda: Adding baking soda to the water will help keep the pods vibrant! Using Frozen Green Beans: Allow frozen green beans to thaw and dry completely. Cook for just 3 minutes instead of 5. Use canned green beans: drain the green beans and dry them completely. No need to cook first. Keep in mind that canned green beans also contain sodium.
