I’m pretty sure my mom pulled these out of a box. That’s all well and good, but there was a bag of sweet potatoes in the drawer of the holster. (new ones. Not the bag here.)

It tasted amazing. I could have gotten away with 1/2 sugar. It tasted like the cans. But this was baked for 5 1/2 hours, so it has to be better, right?

Sweet Potato Casserole With Marshmallows

Update 12/08: I made these for our Thanksgiving dinner and they turned out amazing. I doubled the recipe and omitted marshmallows until the end. Instead, I removed the finished sweet potatoes from the plate and placed them on a round plate. I added the marshmallows and put them in the oven for 3-5 minutes until the marshmallows were nicely browned. We had 10 adults and 5 children for dinner and everyone loved it. It seems the secret to feeding kids is to starve them beforehand… 😉
