This recipe is a simpler version of my Old Fashioned Green Bean Casserole that is made completely from scratch. In this version, you use canned green beans and pre-fried onions, which makes it easier, faster, and easier than my traditional method.
Vegan Green Bean Casserole (without Mushrooms)

You should avoid using skim milk, but you can use any other milk instead of half and half. On the other hand, you can use heavy cream if you want an even richer casserole.
Store leftovers in an airtight container in the refrigerator for 5 days. Heat individual portions in the microwave until warm.

Easy Green Bean Casserole (no Cream Of Mushroom!)
Although Green Bean Casserole is primarily served at Thanksgiving, it’s also perfect for casual dinners like pot pie or takeout parties.
If using fresh green beans, clean and trim them. Then 5 minutes in boiling water with a little salt. A teaspoon of salt per liter of water is fine.
Chop a small onion. Add two tablespoons of butter to a large skillet over medium-high heat. Add the onion and cook until soft, about 2-3 minutes.
Wild Mushroom Vegan Green Bean Casserole
Add 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon sugar and 1 cup sour cream. mix well Stir in about 2 pounds of green beans and 1 cup of shredded cheese of your choice. Cheddar cheese is commonly used, but Colby Jack, Gruyere, or Swiss cheese are good choices.
Transfer bean mixture to a 2 ½-quart baking dish. Top with remaining 1 cup cheese. At this point you can cover and bake in the fridge for 1-3 days. Make the topping while it’s cooking.
Crush 12 Ritz crackers to make ½ cup crumbs. Melt 1 tablespoon of butter in the microwave, then mix the butter with the crushed cookies. You can use a cup of French fried onions added in the last 5 minutes of cooking.
Healthier Green Bean Casserole Without Canned Soup
This recipe works well with fresh, frozen or canned green beans. You can use French or straight cut beans. Frozen or canned beans just dump and disappear, so I gave instructions to use fresh, but use whatever you like.
Cooking Fresh Green Beans: You can’t just throw fresh green beans into a saucepan. They must be cooked beforehand, otherwise they may not be cooked thoroughly. I recommend boiling them. Bring the water to a boil and let it cook for five minutes.
In this recipe, we thicken with a traditional roast, a traditional and relatively simple way to thicken things. Use butter and flour to make a roux, then add cheese and sour cream. You will find more information on how to make salsa in the article How to make salsa at home.
Healthy Green Bean Casserole (no Mushroom Soup)
Why not a can of soup? Soup cans are used in cooking pots and pans to thicken things up and sometimes add flavor. But because of that you add a lot of chemicals and flavors that I don’t like.
A good cheddar cheese is commonly used and provides a great classic flavor. But any cheese will do, like Colby Jack, Gruyere, or Swiss cheese (my choice).
I suggest a frosting of crushed butter cookies (Ritz) mixed with butter. Again, this is a break from tradition for many, but a great, lightweight top.
Fresh Green Bean Casserole • Salt & Lavender
If you want traditional canned fried onions, leave the cookie covered, then cook as directed, but add 1 to 1 ½ cups of French fried onions during the last five minutes of cooking.
The third option is Panko breadcrumbs. Mix 1 cup of Panko breadcrumbs with 2 to 3 tablespoons of melted butter. If you like, you can add ¼ cup of grated Parmesan to the breadcrumbs. Add the breadcrumb mixture at the beginning of the casserole cooking.
The full size recipe is perfect in a 2 ½ quart pan and the ice cream is adjusted to that size. You can use a 9×13 pan, but it’s larger, so the pan will be thinner and you’ll want to increase the frosting by about 50% to cover more surface area.
Green Bean Casserole (from Scratch)
A half-size recipe fits a 1-quart baking dish, or use an 8-by-8, 6-by-9, or 8- or 9-inch round pan. You may need to make some adjustments to the amount of ice cream.
Since this is generally a large family holiday recipe, I have set the quantity and directions for 8 servings. But it’s an easy recipe if you want to cut it in half.
Make a saucepan, but without the sauce and do not boil. Seal tightly and refrigerate for 2-3 days. Add topping and cook as needed.
