Pumpkin Lasagna Dessert With Graham Cracker Crust – This sweet PUMPKIN LASAGNA will quickly become a fall favorite! It starts with a crust made of ginger snaps, followed by a layer of no-bake cheesecake and a layer of fluffy pumpkin pudding. This is easy to do and hard to resist.
But I just wanted to get it out there: this pumpkin lasagna is dessert!
Pumpkin Lasagna Dessert With Graham Cracker Crust
Just like my peanut butter lasagna, there are no real lasagna noodles. You don’t want to serve this to your family for dinner. (Or actually, maybe you do, and I won’t judge you – it’s damn good!)
Pumpkin Cheesecake Lasagna!
Pumpkin Pudding Layer – You make this layer with pressed pumpkin puree, cold milk, instant vanilla pudding, Cool Whip, and pumpkin pie spice mix!
Cheesecake Layer – You need softened cream cheese, powdered sugar and milk to make the rich cheesecake layer of this pumpkin lasagna dessert!
Shell – This shell couldn’t be easier. Just a little melted butter mixed with crushed gingerbread! I love the spiciness of ginger, but if that’s not your thing, see below for suggestions on what else to use!

Soften the cream cheese quickly by cutting the cream cheese into small pieces and putting them in a mixing bowl on the counter. Moisten a dish towel with hot water and wrap it around the bottom of the bowl. It should work in about 20 minutes! Or if you have time, leave it covered on the counter until it comes to room temperature.

The icing on the cake (literally, as it were) for this delicious dessert is the pumpkin pie. I am GOOD at these things. If you can’t find them, white chocolate chips would be a delicious substitute.

Since it’s just the two of us in the house, we froze this dessert lasagna to make it last longer. I was tempted to eat it all in one sitting, but freezing it and eating it a little at a time was a better choice! You can freeze it in an airtight container for 4-5 days. Just take it out about 30 minutes before dinner for maximum deliciousness! (tip: make it a few days before Thanksgiving and wow your guests!)
